Live Lobs


At work, there is a tank of live lobsters. Good thing I don't work in prep, I would be so fired because I would eat them while I prepared them.

Sherry's cake


Sherry's cake is a chocolate butter cake with peanut butter filling, covered in ganache. I was not too happy with how the butter cake recipe turned out, it was from Rose Beranbaum, the author of the cake bible. It was "mealy". No bueno. Part of the procedure was to put cocoa powder in boiling water.  I even used my expensive powder.  What a waste.  I will stay away from her recipes and stick with chiffon for the time being.

Homemade Poptarts


Tried to make homemade poptarts with some leftover pie crust and cherry jam. It was fun! I baked them and froze them, then popped them in the toaster! Next time, I will make a batch and hide some flax and whole grains in it!!

Ensaymada Special


Joey likes the 'Ensaymada Special' from Goldilocks, which is a Philipino bread that is laced with ham and topped with cheese, sugar, and butter. I know it sounds weird, and I thought it was when I first heard of it, but over the years, I have grown to really like them. They are about the size of a large muffin, and probably at least 500 calories each.

So, I tried making my own last week. First I scaled the dough to 75 grams each,
 flattened it out and sprinkled cheese and ham,

folded it up


and knotted them,

 let the proof,

and brushed with butter.


 After baking,


I brushed more butter and sprinkled cheese and sugar.


 They came out ok, but I want to try these next time with a brioche-style dough.  I have no idea how these things are made, but maybe I can hit up Chef AJ for his family's recipe one of these days!
