Joey likes the 'Ensaymada Special' from Goldilocks, which is a Philipino bread that is laced with ham and topped with cheese, sugar, and butter. I know it sounds weird, and I thought it was when I first heard of it, but over the years, I have grown to really like them. They are about the size of a large muffin, and probably at least 500 calories each.
So, I tried making my own last week. First I scaled the dough to 75 grams each,
flattened it out and sprinkled cheese and ham,
folded it up
and knotted them,
let the proof,
and brushed with butter.
After baking,
I brushed more butter and sprinkled cheese and sugar.
They came out ok, but I want to try these next time with a brioche-style dough. I have no idea how these things are made, but maybe I can hit up Chef AJ for his family's recipe one of these days!
